Bilgi Bakes | Tropical Lime & Coconut Loaf Cake

Today I want to share a recipe for a super quick yet totally delicious Lime & Coconut flavour loaf cake which I whipped up yesterday afternoon. If you've visited my blog before, then you'll already know I love baking, if this is your first visit then, hello! So with a week until The Great British Bake Off begins again (how exciting is that? It is one of my favourite shows so I'm really looking forward to it!) I thought this the perfect time to get mixing in preparation. This cake is tropical and has that summer feel to it as it's basically a few steps away from being a pina colada and what could be wrong with that?! It's made from a basic madeira cake recipe and has the flavourful addition of vanilla (of course, you can't not add vanilla!), then coconut and lime zest.

200g self-rising flour
125g of margarine
125g of golden caster sugar
3 free-range / organic eggs
1/4 teaspoon of baking powder (for added woosh!)
zest of 1 lime
1 teaspoon vanilla extract
50g desiccated coconut
30ml semi-skimmed milk
For the drizzle
1/2 a lime, juiced
25g sugar
1 wooden spoon
mixing bowl
rectangular baking tin
baking paper
1. Add margarine and sugar, and mix together. 
2. Add the essence, eggs and gradually add the flour a bit at a time until it is all combined together.
3. Add the milk, coconut, zest and baking powder and combine them into the cake mixture.
4. In the baking paper lined tray, spoon in the cake mix and put in the oven at 180 degrees centigrade. 
5. It should bake in between 30-45 minutes depending upon how deep your baking tray is. Once baked, remove it from the oven and allow to cool slightly. As it is cooling, make the drizzle topping.
6. Simply add the juice of half a lime and 25g of sugar to a small bowl and mix until the sugar partially dissolves. Then drizzle over the cake and decorate with a few sprinkles of desiccated coconut and you're all done!
7. Absolutely have a slice with a cup of tea!
