Bilgi Bakes | Frosted Zesty Cinnamon Apple Chelsea Buns

 
It's officially the dawn of Autumn and as we head towards bigger jumpers, more cosy nights in and the approach of the festive season (how fast has 2018 been going so far?!), I am kick starting my Autumn blog festivities with a baking blog post on my Frosted Zesty Cinnamon Apple Chelsea Buns. Wholesome, sweet and a bit zesty, these buns not only seem to describe me (teehee!) they are also oh so Autumnal with their warming flavour combination and go perfectly with a cup of tea.


 
I have an apple tree in my garden so at this time of year, it is truly bountiful and apples are a seasonal must in my recipes!
 
 
Ingredients
1 x 7g sachet of fast action yeast
500g strong white bread flour
300ml of semi-skimmed milk
1 free-range / organic egg
zest of an orange
40g butter
1.5 tb spoon sugar
1tspoon of cinnamon
 
For the filling
50g soft brown sugar
2 apples
1.5 teaspoons of mixed spice
1 teaspoon of cinnamon
25g melted butter
 
To decorate
2 teaspoons of fresh lemon juice
55g of icing sugar powder
 
1. Start off by adding all the dry ingredients to the bowl and combining.
 
2. Gently heat the milk and butter until warm. Leave to cool.
 
3. Once cooled, add the milk and butter mixture along with the egg to the dry ingredients and kneed until soft and pliable.
 
4. Leave to rise for 2 hours or until double in size.
 
5. Roll out into a rectangle and brush on the melted butter and then sprinkle on the filling ingredients.
 
6. Roll into a sausage and cut into swirls (between 10 - 14).
 
7. Add to the lined baking tray and cover and prove for another hour.
 
8. Bake at 190 degrees for 20 - 25 minutes and voila, they're done!
 
 9. Allow to cool and then neatly ice with lemon icing stripes and finish with a flourish of icing sugar.
