Bilgi Bakes | Chocolate Chip & Vanilla Marble Cake Muffins

 
On a day when I fancy baking and want to see good / tasty results fast, I am partial to whisking up cupcakes. They're fun, they're yummy and I am yet to meet anybody who doesn't like them! I am all for variety, so I do like to make marble cakes, as I like the mixture of vanilla and chocolate cake together (who doesn't really?)! If you fancy baking something that is Autumnal through and through, my recent Starbucks inspired Pecan Caramel Latte Cupcakes are also well worth a go.


 
Ingredients
200g self-raising flour
100g margarine or butter
1 x teaspoon of vanilla extract
3 x Free Range or Organic Eggs
125g Demerara sugar (golden sugar is just better)
3 teaspoons of cocoa powder
150ml semi-skimmed milk
1/4 - 1/2 teaspoon of baking powder (for added lift. It is the push up bra of the baking world!)
50g chocolate chips (dark or milk or both, whatever you fancy)
100g dark chocolate
icing sugar to dust
 
How To:-
 
1. Add the margarine, extract, eggs (one at a time), sugar and gradually the flour and mix / whisk. Add the baking powder in with the flour too.
 
2. Add the milk and whisk (for a really good / light sponge cake) until the mixture is smooth.
 
3. Divide in 2 and add the cocoa powder to one half. Combine thoroughly.
 
4. Teaspoon by teaspoon, add one vanilla then one chocolate spoonful to each cupcake case. This recipe makes 12.
 
5. You can add some sugar to the tops before baking if you want as this adds a nice crispiness.
 
6. Wait until cool then add dark chocolate drizzle to the cupcake tops and dust with icing sugar for a winter wonderland feel.
