Bilgi Bakes | Vanilla & Coffee Swirls

Hello and welcome to another baking inspired post directly from my kitchen to your laptop! Today I want to share with you my vanilla and coffee swirl biscuits which I made using the queen of baking's recipe, of course I am talking about the one and only Mary Berry. What I like about these is that they look so effective and are a great accompaniment to a cup of tea or coffee. So that the pattern works out extra neat, I kept mine refrigerated for a good few hours before I attempted to cut the biscuit slices. If you fancy making these little gems for yourself, I have lovingly provided the recipe just below my photograph. You can thank me later once you've baked them!
 
 
Ingredients to make your own swirl biscuits:-
 
For the vanilla layer:
60g of butter at room temperature
30g of caster sugar
90g of plain flour
a few drops of vanilla essence
1 tb spoon of water
 
For the coffee layer:
60g of butter at room temperature
30g of caster sugar
90g of plain flour

1 tb spoon of coffee essence
 
To make the doughs, combine the butter, sugar and essence well before adding the flour and water and bring it all together into a ball. It's best to make the two doughs separately. To get the swirl effect, you basically lay one rolled out sheet of the dough onto the other, carefully trimming the edges so that they are of equal size / length and then roll tightly, leaving no spaces between the layers into a perfect swirl. Then wrap in cling film, chill for as long as you can wait (about 2 hours should be enough) and then cut into equal 1cm slices and place on a tray lined with baking parchment in a preheated oven set at 180 degrees C and wait for 15 minutes. Ta dah!
