Bilgi Bakes | Naughty But Nice Vanilla & Chocolate Strawberry Sponge

At the ready...

If you know me, then you'll already know that this is one of my all time favourite kind of blog posts because it is about baking which is honestly one of my favourite hobbies, I just love it. My most recent baking project saw me whisking up a storm to create The Ultimate Sponge. With a sandwich cake, you can make the two halves as one cake or bake two independent of each other. I opted for the latter and on this occasion, the result was huge, but nobody has ever complained about having too much cake in their life now have they! Complete with chocolate strawberries and fresh whipped cream, this light and fluffy sponge is true summer, naughty but nice, decadence on a plate.

250g margarine
250g of light golden caster or Demerara sugar
4 Free Range Eggs
1 tsp of vanilla extract
For the top and sandwich
300ml double cream
25g icing sugar powder
Milk chocolate
Fresh strawberries
Strawberry jam
Brown paper
Cake tins of same size
1. Mix the margarine, sugar and eggs with some flour.
2. Add the vanilla extract.
3. Add the rest of the flour gradually and combine thoroughly.
4. Bake in an oven at 175 - 180 degrees centigrade for about 1 hour or until they are baked on the centre and golden brown.
5. Dip the strawberries in chocolate and let them set in the fridge.
6. Once both cakes are properly cooled, start whipping the cream and icing sugar in a bowl with an electric whisk until it holds together firmly.
7. Assemble! Generously spread the strawberry jam and cream on the middle layer and then top with cream. Place the top layer cake on top of this and then layer on the cream here too. Then add the chocolate dipped strawberries and dust with icing and voila! Cake complete!
